1 package cherry tomatoes
1/3 (or more) jalapeño
head red leaf lettuce
2 oz. walnuts (about 28 halves)
1 clove garlic (finely chopped)
cumin to taste
sea salt to taste (optional)
For the salsa – chop the tomatoes, onion, jalapeño, cilantro, & combine in a mixing bowl with the juice of one lemon & sea salt to taste.
For the walnut butter – grind up the walnuts & combine in a mixing bowl with garlic, water, the juice of one lemon, & a generous amount of cumin.
Build your “taco” by spooning the walnut butter onto the lettuce & adding the salsa on top.
