Zuchinni roll-ups. This delicious appetizer or main dish (for what some Vegans call it) and a perfect guilt free healthy low-cal appetizer or dish at a birthday party 🙂
Yield: 5 roll-ups
-2 large carrots
…Kept it simple tonight, just a juicer, blender, and a knife.
OR, you can use a cheese slicer or vegetable peeler, slice the zucchini in 5 thick slices.

Then, using an offset spatula, we put a thin layer of cashew cheese (cashews, water, salt, pepper, white miso) across the entire zucchini.
Look at the picture….cashew cheese is inside the zucchini roll-ups.
Finally, we added carrot strips across the zucchini and cashew cheese at intervals and rolled it up.
Then, topped it off with some black sesame seeds.
