Som Tam in beet juice thai traditional salad

Tolls needed: mortar and pestle, bowl, noodles maker, or papaya slicer

1/4 cup beet root juice
3 cups green papaya shredded
1 cup beet noodles
3 tbsp dehydrated pea nuts
2 tbsp tamari
1 tbsp flax oil
1 lemon juice
2 garlic gloves
2-3 cherry tomatoes
1/2 tsp sesame seeds
1/4 cup mung beans sprout
Salt as you taste
1 small chopped chilly (optional)
2-3 tbsp fresh long green beans
1 tbsp chopped fresh onion
2 tbsp chopped fresh coriander

Soak for peanuts 2 hours and dehydrate for 14 hours
Shred the green papaya by using the papaya shredder or mandolin
Do the same with the beetroot
Juice the small piece of beetroot
Add into the mortar the garlic, chilly, peanuts, long green beans, cherry tomatoes and crush them, add the rest of the ingredients and work with mortar until crush


Serve as salad over cabbage leaves plain or with tzatziki(get the raw one) sauce
