Raw Vegan Pavlova

Here is a delicious sweet dessert made from all fresh fruit.  Perfect for company and special occasions, and keeps well in the freezer.

For this recipe, a mandoline slicer is helpful though not necessary, as well as a Vitamix blender or high-quality food processor, and a springform pan.  If you do not have these items, you may use a knive, a regular blender or food processor, and a casserole dish or large plate.

Ingredients: 8 large bananas (4 semi-frozen and 4 fresh), 2 apples, 20-30 cherries, 2 lemons, raw coconut sugar, cinnamon, 1 tsp ground vanilla bean or non-alcoholic vanilla extract

Thinly slice apples and 4 bananas, and pit and halve the cherries.

In the blender, place 4 semi-frozen bananas, the juice of half a lemon, 4 tsp raw coconut sugar, 1 tsp cinnamon, and vanilla.  Blend until white and creamy.

In a springform pan or casserole dish or on a large plate, place one layer of slightly overlapping apple slices, then top with 4 tsp coconut sugar, a sprinkle of cinnamon, and lemon juice.  On top of that, place one layer of banana slices, then top with banana mixture and a layer of cherries.  Repeat until out of ingredients.  Finish with banana mixture and top with cherry halves and a sprinkle of coconut sugar.  Keep frozen until ready to eat.  Take out of freezer 20-30 minutes before serving and slice.
