Green Gazpacho

Here is a delicious and refreshing raw gazpacho soup with a good helping of greens.  These ingredients can be altered according to what you have available, as long as the basic idea stays the same: tomatoes, greens, whatever other veggies you like (carrots, onion, garlic, zucchini, summer squash, cucumber, peppers, celery, avocado, etc.), lemon juice, salt, whatever seasonings you like (fresh or dried herbs, nutritional yeast flakes, spices, etc.), and water as needed to blend.  You can also add nuts or seeds for a thicker, creamier texture.  You will also want to use a garnish of fresh herbs, diced veggies, flax or sesame seeds, etc.  You can’t really go wrong with this formula!

So here is what I put in the blender:

One roma tomato, one small handful of arugula, one large handful of baby spinach, a few baby carrots, one small zucchini, a bit of fresh dill, a teaspoon of flax seed, the juice of half a lemon, some salt, and a little water.  I blended it until smooth, then garnished it with more fresh dill.

Raw green soup    

This is very refreshing and full of nutrients that your body needs for healing and energy.
