Raw cucumber salsa


Two roma tomatoes or the equivalent

1/4 sweet onion

One cucumber

One lemon or lime

Herbs of choice (Italian seasoning used in above picture, cilantro would be very nice)

Cut onion, cucumber and tomatoes into large pieces and place in food processor and finely chop, or finely chop them by hand.  Flavor with lemon or lime juice, salt, and herbs, according to preference.  This fresh-tasting salsa is wonderful by itself, and would be a great dip for chips or crackers or a topping for a salad or sandwich.  Can be combined with cooked quinoa and extra lemon/lime juice, salt and herbs to make tabbouleh salad.
